I was sent a package in the mail through Pssst, a General Mills club that sends you new products to try and review. Inside was Progresso's new Panko Bread Crumbs, just in time for a recipe I wanted to try. See I was channel surfing and accidentely stumbled upon the Food channel and Guy Fieri making this mouth-watering catfish sandwich with cole slaw and a chipotle mayonnaise. This recipe was so memorable that when I went shopping I actually bought most of the stuff to make it, not from a list but from memory. However, I did forget the panko bread crumbs and magically they appeared in my mail box, yeah this recipe meant to happen for me LOL.
So on a Saturday I made this awesome Pan-fried Catfish Sandwich with Chipotle-Lime Slaw on Chibatta as an alternative to the Cuban rolls Guy suggested.
The Panko bread crumbs made this dish a delight. They were very easy to use and stayed on the fillets very well. They browned wonderfully in the oil and left a great crunch on the catfish. Panko versus regular bread crumbs I would use Panko, especially if I want the added crunch.
I also used them last night to make pork chops for DH. I coated the chops with salt, pepper and the Panko and baked them in the oven. I tried a bite just to see how well they held up and it was a wonderful crunchy texture. They didn't burn in the oven, instead they turned a wonderful golden brown color.
